Viva Mexico, or should that be Viva Tex-Mex? Chilli con carne literally means "chilli with meat" and is often referred to as just "Chilli". Even though it's origins are in dispute, it is the official dish of the U.S. state of Texas, but is much loved around the globe, with recipes tracing back to a Spanish nun! Use in Chilli con Carne, tacos, spicy casseroles, bean soup, or when cooking for J.R. Ewing!
