Satay or sate is a dish of meats traditionally skewered onto the midrib of the coconut leaf. To make, dry roast 3 tbs spice on medium heat until fragrant, then remove from pan. Heat 1/2 tbs peanut oil, 1/2 tbs brown sugar and 6 tbs crunchy peanut butter, stirring continuously whilst adding the roasted spice back in. Add water to desired consistency if required. Pour over grilled skewers.
