This is one of the world's most complex spice mixtures, it often contains dozens of ingredients. Ras el Hanout is a traditional Moroccan blend, meaning 'head of the shop', and usually represents the very best spice merchants have to offer. Light, floral and fragrant, it is a harmonious blend that flavours rice, tagines, couscous, game and lamb beautifully. Add 1.5 tsp spice to every 1.25 cup of rice or couscous.
