Atriplex nummularia
Also known as 'old man saltbush', this herb is native to mainland Australia and is widely used to aid in the reclamation of saline soils. The dried leaves have been used by indigenous Australians, mainly to flavour damper. It is like salt in a herb with a wonderfully subtle and crisp taste - with notes of rosemary. Try it in salad dressings, breads, pork and game meats. A true Aussie battler.
