Picked from a medium sized Eucalypt tree, a native to the montane woodlands of NSW. Due to the high presence of essential oils within the leaf, a strong berry flavour and aroma is released once the dried leaves are milled. Strawberry gum is used to enhance the flavour of cooked fruit dishes, desserts or spiced jams, bringing out the classic 'berry' flavour. Use also in herbal teas.
