This popular roasted Indian chicken dish is simply delectable: mix 2 tbs spice with enough lemon juice to make a paste, then mix with 6 tbsp yoghurt (plain, full fat). Cut gashes into 6 chicken marylands (skin removed) and coat in yoghurt mixture, add 1 tbsp oil and mix again. Marinate in fridge for 4 hours. Bake for 20-35 min (best raised so juices can drip) and then grill. Sprinkle with lemon to serve.
