Tom yum is characterised by its distinctive hot and sour flavours and beautiful fragrance. Heat 1 tbs peanut oil in pot, add 1 finely chopped shallot, zest from 1 lime and 2 tbs spice. Fry until fragrant, pounding the mixture into a paste-like consistency with a wooden spoon. Add 2 cups water, 1 tbs fish sauce, juice from 1 lime and bring to simmer. Add vegetables, seafood or flavouring of choice. Serves 1.
