This is my favourite spice blend fro mushrooms, chicken and duck! I used it at Christmas to make a duck and chicken terrine with pistachios and cranberry served with a homemade cherry jam with thyme! It makes the duck sing!
After having been alerted to the allure of this amazing mix by your Adealide team, I followed their recommendation and enjoyed using this fabulous special addition spice mix enormously over recent months.
Then as it ran low in the shop panic stuck, I grabbed what I thought was the last of Adelaide's supply from the central market store just before Christmas. So glad to see it back ..I hope it stays and so do the people I have shared it with.
Over the last few months, its become my go to poultry enhancer.
Example: take chicken wings sectioned or whole, cover liberally with GGD, Vacuum in Foodsaver bag over night, sous vide at 65-70c, cool bag in iced water before air frying until brown.. OMG!!
Still exploring the possibilities however the fundamentals of this mix are bound to impress the most discerning of palette. Get it if you can and while you can. Hopefully it becomes part of the regular range.
