With less heat than your average chilli, you can safely take a good whiff of the ancho chilli. The complexity of its aroma is tantalising – sweet yet smoky, with notes of caramel and molasses. Add to chilli con carne or meat dishes such as spaghetti bolognese where a balance of sweetness and heat is required. Heat level: 3/10

To make a paste, cook your choice of aromatics such as garlic and onion, adding a few teaspoons of ground chilli towards the end. Allow the mixture to cool, then blitz with oil and vinegar. The sauces and pastes which accompany Mexican dishes often consist of a good variety of chillies, so mix and match to your taste and heat preference.

Get spicy

Love all of the different ground chili varieties from Gewurzhaus. I always keep my cupboard stocked with them. One of the secrets to some mean Mexican cooking! And perfect for soups! Love!

I was looking for something that isn't too hot but still adds a bit of punch (and colour) to food. This is a great type of chilli and has interesting flavour - it is very very low on the heat scale and tastes more like a nutty/caramelly pepper rather than a chilly.. and it's very lovely in stews, as a topping or mixed with other crunchy spices to make something unique.
