Chermoula has been an integral part of the Moroccan kitchen since Arabs introduced spices on their great sweep across North Africa in the 7th century. This blend gives a spicy, true North African flavour. Traditionally used to flavour fish, it is particularly suited to tuna, swordfish, salmon or monkfish, served with crushed black pepper, salt and fresh lemon. Use with fish, poultry, yoghurt.

    This is my go to seasoning for just about everything – I probably use it 3-4 times a week. Its great to jazz up simple roasted fish, chook, or lamb (just a little olive oil, sea salt and chermoula prior to roasting) and perfect in stir fries, curries, and braises. It has enough kick to be interesting but you still get all the flavour. I keep about 3 jars in my pantry all the time as I go through it so quickly!
