For the most mouthwatering salt and pepper squid ever, mix equal parts rice flour and spice, and dust cleaned and scored squid with the mix; fry immediately in peanut or vegetable oil (heated to 180 degrees) for approximately 60 seconds or until crisp. Serve with fresh coriander leaves and lime wedges. Also great for tofu and prawns, cooked in the same way. Tip: Try panko breadcrumbs instead of flour.
