Dried ginger carries less heat than fresh ginger, but retains a pungency that is enhanced with the addition of floral Sichuan pepper and sweet garlic and onion. It is well suited to Asian-inspired dishes such as ginger fish, where it can be added at the beginning and end of cooking.
