So celebrated is Piment d’Espelette that the French government granted it an appellation d’origine contrôlée, meaning that to carry its name, this particular paprika must be grown within one of ten listed villages and left to sun dry for at least 15 days. It is mildly hot and ground more coarsely than other paprikas, with a sweet flavour and beautiful aroma.

I first tasted Piment d'Espalette in a smart restaurant, sprinkled on anchovies that were topping char-grilled slivers of ciabatta. Impressive! A rich orange-red, great texture and a slight bite. It is now a pantry staple, bringing a new dimension to my poached eggs, sprinkled on steamed spinach or a chicken salad, or a casserole. You don't need to use much to make a difference.
delicious. hard to describe, it adds a beautiful earthy flavour. i use it along with other paprikas in a recipe.
