This signature Thai soup is characterised by a riot of hot, sour, salty, aromatic flavours.

Boasting the classic zesty perfume of tropical leaves, the pungent saltiness of dried shrimp and the bold heat of red chillies, our Thai Tom Yum blend makes an exuberant starter or main dish that will make your senses sing.

Heat 1 tbsp of peanut oil in a pot, add 1 finely chopped shallot, zest from 1 lime and 2 tbsp of spice. Fry until fragrant, pounding the mixture into a paste-like consistency with a wooden spoon. Add 2 cups of water, 1 tbsp of fish sauce, juice from 1 lime and bring to simmer. Add vegetables, seafood or meat.
Raw sugar, shrimp, chilli, sea salt, coriander, galangal, lemon grass, turmeric, kaffir lime leaf, garlic, lemon myrtle, coriander leaf, pepper.

addictive

This stuff is addictive, I have added it to eggs, Thai meatballs, mixed it with oil and lime to baste BBQ fish and chicken drumsticks and made it into a salad dressing. About the only thing that I haven't used it for so far is to make soup!

Great taste, easy dinner. The packet suggests 2tbs for 2 cups of water, but I'd recommend 2tbs+2tsp for 2 cups. Half a recipe is enough for two people to eat.
