1. In a food processor, blitz the figs until they form a smooth paste.
2. Add Harissa, Rose Petal powder, salt & water. Blitz again.
3. Let the mixture infuse for 5 minutes.
4. Add oil and vinegar and blitz again. Season to taste with extra salt and vinegar.
This will keep in the fridge for several months if packed tightly into a small jar (180g approx) and sealed.
Serve with our Tender Fennel Roast Pork, a cheese platter or on a filled baguette.
