Real Orange Cake
1 large orange
185g butter, melted
3/4 cup caster sugar
1 1/2 cups of self-raising flour, sifted
How to Cook
1. Coarsely chop and puree the whole orange in a food processor. Transfer to a bowl and add melted butter, eggs, mixed spice and sugars. Mix well.
2. Sift the flour into the mixture and beat well. Pour mixture in a greased 18cm loaf pan. Sprinkle with a little mixed spice and caster sugar.
3. Bake in moderate oven for 50 minutes. To test whether your cake is ready, insert a wooden skewer into the centre- if it comes out clean, the cake is baked!
Tip: Poke holes into the cake once baked and pour Cointreau over it for some extra kick.
