Southern Slow Cooked Greens

Gewürzhaus Jerk Spice and Ranch Spice

Easy Serves: Serves 4-6 as a side dish 2 hours & 15 min

Ingredients

2 tbsp vegetable oil

1 onion, sliced

4 rashers bacon, diced small

1 garlic clove, crushed

2 tsp Gewürzhaus Jerk Spice

1 tsp Gewürzhaus Ranch Spice

4 cups chicken stock

1-2 cups water

900 g (8 cups) mixed greens like kale, spinach and silverbeet, chopped

How to Cook

In the USA, this recipe is traditionally made with Collard Greens which are not always readily available in Australia. We have substituted these with the greens below, however if you choose to use Collard Greens, cook for an extra 30 minutes. To make this dish vegetarian, omit the bacon and use vegetable stock in place of the chicken stock.

1. Heat the vegetable oil in a large pot over medium heat. Add onion and fry until softened, about 5 min. Add the bacon, garlic, chicken stock, spices and water and bring to a simmer. 2. Add the greens to the pot and cook for approximately 45 min or until tender.

Serving
