Ingredients

2 large eggplants, halved lengthwise

½ tsp sea salt

1 clove garlic, grated

2 tbsp lemon juice

2 tbsp olive oil, plus extra for brushing eggplants

1 tbsp Gewürzhaus Everything Mezze Blend
Directions
- Preheat oven to 200˚C, fan forced. Line a baking tray with baking paper.
- Brush eggplants cut side up with a little olive oil and place cut side down onto the baking tray.
- Bake for 35–40 minutes until eggplant is softened and slightly charred.
- Scoop out eggplant flesh into a large bowl. Add salt, garlic, lemon juice, oil and Everything Mezze Blend.
- Whisk vigorously with a fork until mixture is creamy.
Season with extra lemon juice, garlic and Everything Mezze Blend to taste, if needed.
