Place potatoes into a pot and add enough water to just cover. Boil potatoes until they have softened, 20-25 minutes.
While the potatoes are cooking, prepare the meatballs. Place mince, breadcrumbs, egg and Mama’s Meatball Blend in a large bowl and gently mix ingredients together until they are just combined. Roll into 12 meatballs.
Place oil (or lard) in a frying pan on medium heat. Gently cook meatballs, turning consistently to brown all over. Cook for 15 minutes or until cooked through.
To make the tomato salsa, place semi-dried tomatoes in a blender with ½ cup water and blitz until finely chopped. Add another ½ cup water for a looser consistency, if desired. Transfer semi-dried tomatoes to a saucepan and add the Mama’s Meatball Blend to warm through.
Drain the potatoes, add back to the pot with the butter, and mash together until you achieve the consistency to your liking. Stir through chopped parsley until evenly combined and season with salt to your taste.
Serve the herby mash and salsa alongside the meatballs. Alternatively, add the sauce to the pan of cooked meatballs and coat in the sauce to serve alongside the mash.
