To make the corn ribs, stand each corn upright on a stable cutting board. If the base isn’t flat, carefully trim the stem end so it forms a flat steady base. Using a sharp knife, carefully cut downwards for the length of the corn cob, forming 2 halves. Then cut each half carefully in two, down the length to form four separate ribs.
Mix the Peri Peri Spice with the olive oil to form a paste. Place corn ribs in a large bowl and rub with the Peri Peri paste.
Heat a grill pan or BBQ to a high heat. Grill the corn ribs for about 15 minutes, turning occasionally, until golden and slightly charred.
