Until the mid-19th century, the Banda Islands were the world’s only source of nutmeg and mace, harvested from the nutmeg tree. This nutmeg, ground from the highest grade of fruit, boasts strong aroma and flavour. Its resinous, sweet, heady fragrance adds depth and character to cakes, pies and all manner of baked goods. It also complements savoury cheese and cream dishes, and vegetables such as spinach, carrot and pumpkin.

Use very sparingly; about ¼ tsp of ground nutmeg per 500g of flour should suffice. ½ whole nutmeg roughly equals 1 tsp of ground.

Depth of flavour

The nutmeg smelled wonderful. So far I’ve only made an old fashioned baked custard with a generous sprinkling of nutmeg on top. My daughter loved it and ate most of the custard. She wants to use my nutmeg in some of her Christmas cooking. I’ll be looking to purchase all my spices here in future.
