Moderately hot with fruity tones, Madras Curry Masala is a typically strong South Indian curry blend. As it releases its flavours after only a short cooking time, it may be added towards the end of cooking in dishes such as pumpkin soup. Madras Curry Masala is an accommodating blend that will suit most meat, vegetables and even fruit.

If a recipe calls for roasted curry powder, dry heat a frying pan, add the spice and move around to prevent it burning, and remove once fragrant. For even richer flavour, add tamarind paste or lemon juice to the curry towards the end of cooking. Great in rice or minced meat fillings, or added to mayonnaise for a dipping sauce.

I made the Madras Beer Curry with Raita with this blend and it was very yummy. The blends just make cooking easy & the meal is authentic, love them.
