A seamless and flavoursome recipe, enhanced with our Everything Mezze Blend adding bursts of smoky and tangy flavours that perfectly complement the aromatic fennel and lemon.
In a small bowl add olive oil, cinnamon, cumin, Aleppo peppers, salt and crushed garlic. Mix to make a paste and rub onto chicken pieces.
Preheat oven to 180˚C, fan forced.
In a large baking tray, add drained chickpeas and layer fennel wedges on top. Pour in the chicken stock.
Next, add marinated chicken pieces on top of the fennel and chickpeas and place lemon slices and olives evenly around the chicken.
Sprinkle Everything Mezze Blend over the chicken then place baking tray in oven.
Bake for 45 minutes until chicken is golden.
Serve with rice, cous cous or flatbreads.

Can you ever smell a recipe on the page? Amazing aroma from the oven when its cooked!
Tried this and it is now a regular quick & easy bake for the midweek. Works great on thigh fillets too (tend to add these 10 mins into cooking time) and other white/light meats and firmer fillets of fish.
