Vegan Spekulaas Cake

Ingredients
- Plant-based butter, for greasing
- 225g self-raising flour
- ¾ tsp baking soda
- 1 tbsp Gewürzhaus St Nicholas Spekulaas
- ¼ tsp fine salt
- 200g brown sugar
- 100g golden syrup
- 100g light extra virgin olive oil
- 45g aquafaba
- ½ orange, zested
- 100g unsweetened plant based milk
Directions
- Preheat oven to 160°C conventional. Lightly butter and line the bottom and sides of a 20cm circle tin.
- Sift flour, baking soda, Spekulaas spice and salt into a large bowl and whisk together well.
- Add sugar, syrup and olive oil into a small pot. Place over a low heat and gently stir until sugar has dissolved and melted.
- Beat aquafaba with hand beaters or a whisk for about a minute until frothy. Add orange zest and milk and whisk to combine.
- Add sugar mix and aquafaba mix to the dry ingredient bowl. Using hand beaters gently mix batter until just smooth.
- Pour batter immediately into tin and bake for 25-30 minutes. Check for doneness after 25 minutes using a skewer.
- Cool for 5 minutes in the tin and then transfer to a wire rack. Once cooled dust with icing sugar.
Recipe Note
Serving suggestion: serve with coconut yoghurt and orange and vanilla poached pears.
