Mexican Flavours
Sort by:
Affectionately named 'little raisin' due to its resemblance to both the colour and flavour of raisins, the pasilla chilli is one of the main ingredients in Mexican mole. With chocolate overtones and a delicious fruitiness, this chilli is a must try. These whole dried pods can be rehydrated whole for a rounder mole sauce, or can be toasted and ground fresh for a more vibrant powder.
Heat Level: 4/10
This chilli's deep red flesh has a green-tea flavour with berry overtones. Used in salsa for tamales, the guajillo chilli is also great in pastes, butter and meat rubs - try it with chicken. This ground chilli is ready to use straight from the jar, ideal for quick rubs, marinades and pastes.
Heat Level: 4/10
Also known as Chile Mosquito, this small yet hot Mexican varietal is a domesticated relative of the Tepin Chilli. We use this chilli in our English Pickling Spice, but it is also good for giving heat and flavour to vinegars, salsas and sauces. With a smoky, nutty and citrus-like taste, its neat, rounded shape is also pleasing to the eye.
Heat Level: 9/10
One of the hottest chillies on the market, the habanero is not for the faint-hearted! Add it sparingly to hot sauces, stews and curries. The delicious citrus-like flavour and floral aroma are quickly overpowered by its heat. These whole dried pods can be rehydrated and used whole or toasted and ground fresh for a more vibrant, aromatic powder.
Heat Level: 10/10

Mild seedless chilli is made by deseeding the fruit of long chilli to remove some of the heat, then chopping to form a crushed flake. Excellent in pasta, risotto and other dishes where you want visual appeal and just a friendly suggestion of heat. Its bright colour lifts barbecue seafood marinades and poultry dishes. Seedless chilli also sticks to food better than its seeded counterpart.
Heat Level: 6/10
Used primarily as a natural red food colouring, annatto seed appears most commonly in South and Central American cookery, such as in achiote paste and adobo. Its soft lemon-peppery taste and mint tones complement seafood, meats, vegetables and rice.
Open a jar of our Cinnamon and once you smell the difference, you’ll realise that not all cinnamon is the same.
Ceylon cinnamon (Cinnamomum verum - literally 'true cinnamon') is grown in Sri Lanka and has a sweeter, more floral and delicate character than anything you've likely used before. Our A Grade is the finest tier available, with a high essential oil content and an exceptional fragrance straight from the jar.
Subtly sweet and woody, cinnamon imparts a delicate warmth that melds and harmonises other flavours. It is beautiful used in baking, porridge and warm drinks, or added to savoury Moroccan and Indian dishes such as tagines and curries for a subtle, aromatic sweetness.
At medieval weddings in Germany, the bride and groom carried cumin, amongst other spices, in their pockets to secure themselves against infidelity. Generally, though, cumin is added to dishes all over the world for its warm, earthy aroma and flavour: a little bitter, even nutty, similar to caraway yet less intense. Also known as: Cummin, jeera
Oregano is widely used in Turkish, Greek, Portuguese, Spanish, Latin American and Italian cuisines. The dried leaves are often more flavourful than the fresh ones. With a strong, savoury aroma, oregano is commonly used in tomato sauces, soups, stews, pizza, pasta, grilled meats and is a great complement to olives, capers and spicy food.

Zingy black lime, smoky Spanish paprika and four different chillies - this seasoning will freshen up your barbecuing repertoire for good. This earthy blend is best made into a marinade - mix equal parts spice with high-heat oil and apply generously to fatty cuts like salmon or chicken drumsticks. Also delicious on prawns and barramundi. Finish with a squeeze of juicy lemon.
