Also delicious added to burger patties, onion wedges, sticky wings or glazed ribs - the possibilities are endless! Use as a marinade or a dry meat rub for beef, lamb, pork or chicken. And of course, it can be reduced to a magnificent sweet, sticky glaze that is the work of mere moments.

A sampler version of our top selling spice blend, this spice sachet and matching recipe is a thoughtful way to introduce Gewürzhaus spices to family and friends.
Spicy, sweet and full flavoured, this seasoning is synonymous with Jamaica. A perfect dry or wet marinade for grilled, slow cooked, smoked or roast meats, Jamaican Jerk Spice is traditionally used with pork or chicken. It is also delicious with chargrilled vegetables, fish or shellfish, and in a vegetarian version with firm tofu or pulled jackfruit. This blend has the unmistakable flavour of allspice, balanced with the heat and depth from chilli, ginger and cinnamon.
Cooking on a barbecue is one of the most enjoyable ways to share a meal outdoors with family and friends. The BBQ Medley Spice Kit has everything you need to make your next barbecue the best yet.

A key feature of Ethiopian and Eritrean cooking, Berbere gives wats (stews) of meat, vegetables or lentils their signature flavour.
This classic East African blend is a fruity, fiery, powerhouse blend with strong flavours of chilli, cardamom and fenugreek. It is used in staples like doro wat (chicken stew) and misir wat (red lentil stew), and is typically eaten with injera, a fermented flatbread. Berbere's richness also complements red meat and oily fish.
Flavour Notes: Fiery heat, earthy, fruity

Black Lava Sea Salt gives a briny textural crunch and dramatic visual contrast to white, green and red coloured foods, such as fish, pasta, puréed leeks, tomatoes, turnips and potatoes. Large white crystals of sea salt are enriched with activated charcoal from volcanic areas in Cyprus, which turns it sensationally black.
Bohnenkraut, also known as summer savoury, has a flavour akin to a combination of marjoram, sage and thyme. It is sweeter, more delicate and less bitter than its close relative, winter savoury. As its German name suggests - bohnen 'bean', kraut 'herb' - it is a must in any German bean dish, especially bean soup. In Bulgaria, it is mixed with paprika and salt to replace salt and pepper on the table and is called sharena sol, or 'colourful salt'.
Traditionally, a bouquet garni (French for 'garnished bunch') consists of fresh herbs bound within leek leaves. Our Bouquet Garni uses dried herbs which we recommend placing in infuser bags. Add to soups, stews and casseroles, and especially, use to make a good stock. Bouquet Garni is used in the preparation of many French dishes, including beef bourguignon, pot-au-feu, carbonnade flamande, lapin chasseur and bouillabaisse.
Flavour Notes: Herbaceous, fragrant, bright
Cuisine: French

Use Bratkartoffel Spice to make bratkartoffeln, or ‘fried potatoes’, a traditional German dish where potatoes and onions are thinly sliced, then pan fried in butter with spices until crisp and golden brown. Bratkartoffeln can be eaten as a main meal with fried eggs or as a side dish to roasts. This popular and flavourful blend can also add extra flavour to various stews and purées.
Flavour Notes: Herbaceous, savoury, warmly spiced, complex
Cuisine: German

A Mediterranean-flavoured sprinkle for tomato lovers. It's made for bruschetta, sprinkled directly onto fresh sliced tomatoes with a drizzle of olive oil but is just as useful stirred through a salad dressing or added to pasta sauces. It’s also delicious on avocado toast or mixed into a dip for a hit of warm Mediterranean flavour.
Flavour Notes: Herbaceous, savoury, umami-rich
Cuisine: Italian

The caraway seed has a long and colourful history: fed to pigeons to keep them loyal to house and home, buried with ancient Egyptians, and simply enjoyed sprinkled on baked breads. Add this seed whole or ground to vegetables, breads (especially rye), savoury pies and pasties. Its fennel-like characteristics match beautifully with cheeses, apple, pork and cabbage.
Not to be confused with green cardamom, brown cardamom pods are dark brown, oval shaped and about 2.5cm long. Also commonly known as black cardamom, they have a distinctly astringent aroma though not bitter, with a coolness similar to mint. They give a delicious smoky taste to marinades, casseroles, and butter chicken and tandoori curries. Also known as: Elaichi, tsao-ko, winged cardamom.
The signature spice of the famous chai tea, cardamom is sweet and aromatic with camphoric tones. This bright, complex flavour brings sophistication to cakes, biscuits, puddings and scrolls; curries and stews; rice dishes; stewed and preserved fruits; red meats and milky beverages. This whole pod is picked while still immature, ideal for infusing whole into simmering curries and rice, or splitting open to release the seeds and their aromatic oils.

This bright, complex flavour brings sophistication to cakes, biscuits, puddings and scrolls; curries and stews; rice dishes; stewed and preserved fruits; red meats; and milky beverages. These are the loose seeds removed from the pod, ready to add whole for a slow infusion or crush fresh for a more concentrated flavour.
Flavoursome and easy to use, Caribbean Fish and Scampi Spice complements all seafood, and can be adjusted for a delicate flavour or deep char. It is magic when paired with scampi and grilled, and matches well with prawns, lobster, fish and even poultry. Add it to seafood soups and chowder for a rich flavour, or season seafood and pan fry in butter.
Cassia - also known as Dutch cinnamon or baker's cinnamon - is bolder than true cinnamon. Cassia's sweet and spicy fragrance and flavour is more intense than that of cinnamon. Its slight bitterness makes it distinctly different from cinnamon and gives its sweetness depth. Cassia is delicious in more robust sweet dishes such as fruit cakes, strudels, compotes and crumbles. It is often used in curries and stews for a balancing sweetness.
Cayenne pepper, contrary to its name, has nothing to do with pepper: it's a blend of hot chillies selected to provide a balance of heat. Use instead of chilli powder or even pepper. Great in scrambled eggs, frittatas and quiche. Also known as: Aleva, bird pepper, cow horn, guinea spice, hot chilli powder.
