South Indian Seafood Masala

The colour of South Indian Seafood Masala reminds of an Indian bride’s henna, applied to her hands before her wedding; the deeper the colour, the deeper her love! This gentle but full-flavoured blend suits all manner of seafood, whether in a classic Keralan fish curry or as a fabulous dry rub on pan-seared salmon. Also a favourite among vegetarians, this spice blend makes an easy dahl using red lentils.

For a Keralan fish curry, work 4½ tsp of spice, 3 garlic cloves, 1cm grated ginger and 2 tbsp of water into a loose paste. In a heavy-based pan, fry ½ small diced onion, add the paste and fry until fragrant. Add ½ cup of tinned tomatoes and fry for another 5 min after the liquid dissolves. Stir in 150ml of coconut milk and ⅓ cup of water and simmer for a further 5 min. Add 200g of fish and vegetables, cook until tender.
Salt, coriander, sugar, mustard seed, cumin, chilli, turmeric, cinnamon, nutmeg, clove, cardamom, ginger, fennel, pepper, cassia.

Beautifully balanced spice

Used this to make the Keralan Fish Curry. Wonderful meal, we made it with Blue Eye Trevalla. Will be a regular.
