2 tbsp olive oil
6 sausages, good quality beef or pork
2 zucchini, diced or roughly chopped
2 carrots, diced or roughly chopped
2 spring onions, ends removed & sliced
2 tbsp Gewürzhaus Maria’s Pizza and Pasta Blend
2 tbsp tomato paste
2 cups passata
1 tbsp brown sugar
500g spirali/farfalle or penne pasta
Salt and pepper, to taste
Parmesan cheese to serve
1 tbsp Gewürzhaus Italian Herbs
Heat olive oil in a frying pan over medium heat.
Squeeze the sausage meat out of the skins & add to the pan. Break the meat up with a wooden spoon & stir while frying.
Dice vegetables or chop them up coarsely in a food processor. Set aside.
Mix in the Maria’s Pizza and Pasta Blend and tomato paste and fry until fragrant, about 1-2 minutes.
Add vegetables, passata and brown sugar to the pan and mix well. Cook over medium-low heat, stirring occasionally.
Meanwhile, cook the pasta in a large pot of boiling salted water until ‘al dente’ (still has some ‘bite’).
Once cooked, drain the pasta, reserving 1 cup of the cooking water.
Transfer the pasta into the frying pan with the sauce & stir well. If the sauce is too thick add some of the reserved cooking water. Season to your liking with salt & pepper
Serve in a large bowl, grate over some Parmesan cheese & scatter the Gewürzhaus Italian Herbs over the top.
