Heat the olive oil in a frying pan over medium heat.
Squeeze the sausage meat out of the skins and add to the pan. Break the meat up with a wooden spoon.
Mix in Maria’s Pizza & Pasta Blend and tomato paste and fry until fragrant, about 1–2 minutes.
Add the vegetables, passata and brown sugar to the pan and mix well. Cook over medium-low heat, stirring occasionally, until the pasta is ready.
Meanwhile, cook the pasta in a large pot of boiling salted water until ‘al dente’ (still has some ‘bite’).
Once cooked, drain the pasta, reserving one cup of the cooking water.
Transfer the pasta into the frying pan with the sauce and stir well. If the sauce is too thick add some of the reserved cooking water. Season to your liking with salt and pepper.
Serve in a large bowl and top with a generous sprinkle of parmesan cheese.
