Pre-heat oven to 180°C - 200°C (fan-forced).
In a bowl, mix breadcrumbs, Everything Bagel Blend & chopped parsley; add olive oil a tablespoon at a time, mix well and take care not to drench the crumb.
Put the crumb mixture on a plate or shallow bowl for easy coating later.
Spread the mustard evenly over the top of the fish, covering to the edges.
Place mustard-side face down into the crumb mixture. Press firmly.
Arrange the fish on a lined baking tray with crumb side up. Drizzle with a little more olive oil.
Bake for 12 minutes, or until the thickest part of the fish flakes easily with a fork & the crumb is golden brown.
