Panko crumbs mixed with the Everything Bagel Blend creates a crispy, savoury crust, contrasting perfectly with the sweetness of rockling in this simple dish.
4 rockling fillets (or other white fish that is good for baking in the oven)
4 tbsp extra virgin olive oil
½ cup panko breadcrumbs
1 tbsp chopped parsley
4 tbsp dijon mustard
1 tsp Gewürzhaus Native Red Gum Smoked Salt
3 tbsp Gewürzhaus Everything Bagel Blend
Lemon wedges, to serve
Pre-heat oven to 180°C - 200°C (fan-forced).
In a bowl, mix breadcrumbs, Everything Bagel Blend & chopped parsley; add olive oil a tablespoon at a time, mix well and take care not to drench the crumb.
Put the crumb mixture on a plate or shallow bowl for easy coating later.
Spread the mustard evenly over the top of the fish, covering to the edges.
Place mustard-side face down into the crumb mixture. Press firmly.
Arrange the fish on a lined baking tray with crumb side up. Drizzle with a little more olive oil.
Bake for 12 minutes, or until the thickest part of the fish flakes easily with a fork & the crumb is golden brown.
Serve with lemon wedges and our Warm Zucchini Salad with Everything Bagel Blend.
