Before you start, sterilise your jar and lid to get rid of any bacteria. This can be done by either washing it in the dishwasher on a very hot cycle, placing it on a baking tray in the oven and heat it at around 100ºC, or simmer it, completely immersed, in a large pot of boiling water for 10 minutes.
In a food processor, blitz the figs until they form a smooth paste.
Add Harissa, Rose Petal Powder, salt and water. Blitz again.
Let the mixture infuse for 5 minutes.
Add oil and vinegar and blitz again. Season to taste with extra salt and vinegar.
This will keep in the fridge for several months if packed tightly into a small jar (180g approximately) and sealed.
