Chop those sticky, chewy potato dumplings into cubes to create a tasty hash with bacon, fresh parsley and a dollop of sour cream. Add a shake of your favourite herbed salt, like Roast Vegetable Salt for extra flavour. The cubed dumplings crisp up so well for a crunchy meal that can be enjoyed at any time of the day.
3 generous tbsp of olive oil
2 rashers of bacon, roughly chopped
1/2 brown onion, chopped
2 - 4 leftover Silesian dumplings, diced into bite-sized pieces
1tsp Roast Vegetable Salt
2 sprigs of fresh parsley, chopped
Sour cream
Heat 3 generous glugs of olive oil in a cast-iron pan over MED heat.
Add the onion and bacon. Fry until the onion is brown and starting to crisp.
Add the dumplings and continue to fry, stirring as you go.
When the dumplings are golden brown, add a sprinkle of Roast Vegetable Salt and toss again.
Serve with parsley and a dollop of sour cream.
