Bavarian Roast Chicken Salt is a southern German classic with strong flavours and versatility. This salt is a delicious accompaniment to white meats including chicken, turkey and pork. A nice pinch on hot chips or roast potatoes makes for a wonderfully crunchy taste. Try adding a little to enhance the flavour of gravies and other sauces. Ein super Salz!
Made from ground and whole celery seeds blended with flake salt, Old Fashioned Celery Salt has been used for generations. Celery seed greatly enhances the briny crunch of salt with a sharp, warm aroma, and slightly bitter taste. Celery Salt is a vital ingredient of the Bloody Mary cocktail and the famous Chicago-style hot dog.
This spice will find its way into all your baking, when used with the natural sweetness, smoothness and binding ability of the humble pumpkin. Add to traditionally sugar-heavy goodies and cut out some of the sugar; it also works a treat with granola, nut bars and smoothies, partnering well with coconut and dairy-based dishes. The spice also complements savoury dishes, such as pumpkin gnocchi or zucchini fritters. Of course, it makes the great American Pumpkin Pie.
Flavour Notes: Warmly spiced, woody, slightly sweet
Cuisine: American

Rosemary has needle-like leaves and a pine-like flavour with bitter notes. This fragrant evergreen herb complements a wide variety of foods, most notably lamb. The dried leaves need a little time to soften and release their flavour, so they work best added early in soups, stews and braises.
Sweet, savoury, fragrant and irresistibly warm, Lamb Spice brings bold European and Mediterranean flavours to life in every bite. Perfect for marinating lamb before grilling or roasting, simply blend with oil to unlock its full depth and aroma. Want to impress at the table? Use it to create a rich finishing sauce for roasts or whisk it into a vibrant dressing for hearty salads.

The ancient Greeks believed that thyme was a source of courage; they used it in baths and burnt it as incense in temples. Today, thyme is widely cultivated and used for its heady floral lemon scent.
In days gone by when marjoram was believed to symbolise happiness, it was planted on graves to give peace to the departed. In culinary use, marjoram's bitter sweetness gives depth and character to salads, soufflés and stuffing.
This tuberous rhizome has been travelling across oceans since Chinese navigators began growing it in planter boxes onboard their vessels. Versatile and well represented in many cuisines, ginger in its powdered form can be added to stir-fry dishes, noodles and rice, sauces and marinades.
Sage has a peppery taste and is often used for flavouring rich and fatty foods, especially as a marinade. In German cuisine, it is often used to flavour sausages and in Italian cuisine, to make burro e salvia where sage is sautéed in olive oil and butter until crisp then served with pasta. In ancient times, sage was used to increase women's fertility! Also known as: Garden Sage, Salvia
Until the mid-19th century, the Banda Islands were the world's only source of nutmeg and mace, harvested from the nutmeg tree. This nutmeg, ground from the highest grade of fruit, boasts strong aroma and flavour. Its resinous, sweet, heady fragrance adds depth and character to cakes, pies and all manner of baked goods. It also complements savoury cheese and cream dishes, and vegetables such as spinach, carrot and pumpkin.
Mace blade is the lacy dried covering that is derived from the nutmeg seed. The mace is peeled off and dried, revealing a yellowish-reddish colour. Mace features prominently in Asian, Caribbean, Indian and Moroccan cuisines.
Although larger than other mustard seeds, yellow mustard has less heat. It is the most commonly used variety, and when ground into a powder, is hotter than the whole seed. Used for culinary purposes since prehistoric times, mustard seeds are still being used in much the same way; to make mustard, marinate meats and fish, and flavour and thicken sauces.
The world's most expensive spice, saffron is the stigma plucked from the purple-flowered crocus. Each flower has only three stigmas, and a five-acre plot yields between 500 and 750g of this hand-picked spice. This B-Grade saffron includes a touch more of the natural yellow style alongside the red stigma, giving it a slightly milder colour and flavour than A-Grade, at a more accessible price.
