Use fiery chilli flakes with seeds in dishes which require robust heat and texture. Sprinkle over pizza, pasta, soups and roasts. Should you wish a softer texture, add the flakes at the start of cooking. Perfect for making your own chilli oil. Also use in stir-fries, curries, stews and Asian dipping sauces. Heat level: 7/10

To make chilli oil, put 2 tbsp of chilli flakes in a bowl. In a small saucepan, heat 6 tbsp of peanut oil until hot enough to brown a breadcrumb. Pour the hot oil over the chilli flakes and allow to cool down before storing in a sterilised jar. For an even more aromatic oil, combine at the start with Sichuan pepper, star anise and garlic clove.
