A popular Southeast Asian dish and one of the national foods of Singapore and Malaysia, laksa is a thick spicy coconut noodle soup typically topped with prawns, cockles, fish cakes and beansprouts. Making it is joyful in its sheer simplicity.
For a traditional laksa, heat 1 tbsp of oil with 2 tbsp of spice in a pot and stir until fragrant, then add 1 sliced shallot and fry for 1 min. Add 650ml of stock, 1 tsp of fish sauce, 350ml of coconut cream and bring to simmer. Add 200g of tofu, seafood or chicken and cook for 2–5 min, then add 100g of vermicelli noodles and cook for a further 2 min. Serve with fresh bean sprouts and coriander leaves. Serves 2.
