Ras El Hanout is one of the world’s most complex spice mixtures, and often contains dozens of ingredients. It is a traditional Moroccan blend, meaning 'head of the shop', and represents the very best a spice merchant has to offer. The recipe shifts from souk to souk, but our blend contains 29 spices including paprika, cumin, ginger, coriander, cassia and turmeric. Earthy, floral and fragrant, this harmonious signature blend flavours rice, tagines, couscous, game and lamb beautifully.

This wild and weedy perennial originated in Eastern Europe, where it still grows rampantly on road sides and in ditches. With anise-like characteristics, dill leaf is used to flavour pickles and preserves; garnish seafood, especially smoked salmon; and pep up white sauces.

This blend of herbs and spices makes the ultimate accompaniment to grilled or roasted meats, whether used as a zingy marinade before cooking or poured over meat or vegetables after grilling.

Not to be confused with green cardamom, brown cardamom pods are dark brown, oval shaped and about 2.5cm long. Also commonly known as black cardamom, they have a distinctly astringent aroma though not bitter, with a coolness similar to mint. They give a delicious smoky taste to marinades, casseroles, and butter chicken and tandoori curries. Also known as: Elaichi, tsao-ko, winged cardamom.
One of the most popular and widely used herbs in the world today, parsley (also known as 'curled parsley') has a distinctive herbaceous, slightly bitter aroma and taste that works as a contrast to highlight other flavours. Dried parsley holds up well in cooked dishes like stocks and sauces, though fresh is still best for garnishing and finishing.
Juniper berry is in fact not a true berry but a cone. Its outer layers do not contain much flavour, so grinding or crushing maximises the release of its fresh green citrus flavours. Juniper imparts a sharp taste to meat dishes, especially wild birds and game meats.
All ingredients in our Egyptian Dukkah are individually roasted and ground to optimise the blend's flavours. Versatile, crunchy and fragrant, it is delicious used as a dip with crusty bread and oil; to coat chicken, veal or fish before frying or baking; and to scatter over salads, noodles and vegetables. The Arabic word ‘dukkah’ or ‘duqqa’, means ‘to pound’, reflecting the process of making this universally loved blend.

Pyramid Flake Salt is especially valued for its pure qualities and unique, rich flavour. Harvested near Victoria's Pyramid Hill, flake salt's delightful bite adds character to cooking and salads. When used as a finishing salt, flake salt reveals a unique sharper taste to the palate and so less salt is required.
While chillies are mostly used for their flavour and heat, paprika is used for its vibrant colour and full-bodied, rich flavour. Also from the capsicum family, paprika is the name given to only slightly hot members. This paprika (also known as 'pimentón dulce') is sweet in flavour without any bitterness. It is well used in most European recipes including Hungarian gulasch and roast chicken.

Think back to that pepper tree in your schoolyard: this little berry is from a very close relative, yet is not the true pepper we generally consume alongside its companion, salt. Pink Schinus Pepper carries less heat, yet more camphoric and sweet characteristics than normal pepper. It is used widely in Mediterranean fish dishes and, much like juniper berries, matches well with game meats. Pink Schinus pepper also belongs to the same botanical family as the cashew tree. Also known as: Schinus Pepper
This aromatic finishing salt is a summer garden in a jar. We've made it a low-sodium salt blend by adding almost 25% saltbush to a delicious, fresh and summery blend of herbs, petals and Victorian sea salt. Use it as a low-sodium alternative to seasoning with pure salt, as it contains 70% less sodium than mainstream table salts.

With three different harvests from the pepper vine, Peppermill Trio combines the sharp, sweet and earthy flavours of white, black and green pepper. While chillies are mostly used for their flavour and heat, paprika is used for its vibrant colour and full-bodied flavour. Also from the capsicum family, paprika is the name given to only slightly hot members. This paprika (also known as 'pimentón ahumado') is strongly smoked and neither sweet nor hot.
