25ml Chinese cooking wine
25ml kecap manis (sweet soy sauce)
10ml soy sauce
1/2 lime, juiced
1 1/2 tbsp Gewürzhaus Hawker-Style BBQ Blend
1 1/2 tbsp brown sugar
1/2 tsp sesame oil
750g chicken drumsticks
1 tbsp Gewürzhaus Sesame Seed (Golden), toasted, to serve
Fresh coriander leaves, finely chopped, to serve
Make a marinade by combining the wine, kecap manis, soy sauce, lime juice, Hawker-Style BBQ Blend, sugar and oil in a jug and stir well.
Place the chicken drumsticks in a large bowl and pour one third of the marinade over the chicken and toss to coat. Cover and leave to marinate for at least 30 minutes.
In the meantime, toast the sesame seeds in a dry pan until lightly golden. Set aside.
When you’re ready to cook the chicken, heat the remaining marinade in the microwave for 1 minute, or until thickened slightly.
Place the chicken drumsticks in the air fryer. Using a pastry brush, coat the chicken with the marinade.
Cook for 10 minutes at 180˚C. Turn the chicken and recoat with the marinade, then cook for a further 10 minutes or until cooked through.
Remove from the air fryer and garnish with the toasted sesame seeds.
