Blitz all the ingredients together in a food processor for 20 seconds or until well chopped and combined. Roll teaspoon full-sized portions into balls, then roll in coconut. Refrigerate until firm.
Coat or drizzle with melted white chocolate, and decorate with dried cranberries or orange zest. If coating in white chocolate, do not coat in coconut first to ensure a smooth finish.
To serve
Keep refrigerated between serving.

Depending on the size of the dates, if the mixture is too soft you can add a little more coconut.
