Add chocolate and condensed milk to pot and stir over low heat until melted until smooth. Do not allow the mixture to boil.
Once mixture is almost combined, add at least 1 tbsp of Gingerbread Spice and stir to combine. For a stronger gingerbread flavour, add up to 1 additional tablespoon of Gingerbread Spice.
Once fully combined, pour mixture into a cling film lined container. Make sure to do this while the mixture is still hot, as it will firm up fast as it cools down.
Sprinkle additional Gingerbread Spice and flaky salt on the surface.
Cool until solid in the fridge or on a counter top. Once set, use a warm knife to cut into bite-size portions.
