Cut the potatoes into long, even chips and pat dry thoroughly with a clean tea towel.
Place the chips in a bowl, drizzle with olive oil and sprinkle with Peri Peri Spice. Toss well to coat evenly.
Preheat the air fryer to 200°C (or the oven to 220°C conventional/200°C fan-forced). Cook the chips in a single layer, for 20–25 minutes (or the oven for 35–40 minutes), turning halfway through, until golden and crisp.
While the chips cook, mix the mayonnaise with Peri Peri Spice until well incorporated. Adjust spice to taste.
Remove chips from the air fryer or oven and season generously with Peri Peri Salt. Serve hot with the Perinaise on the side.
