Separate the eggs, placing the whites into a large mixing bowl and the yolks into a small bowl. Whisk the egg whites until soft peaks form. A stand mixer or hand-held mixer will give the best volume and stability.
Add the cold water and Citrus Furikake to the egg yolks and whisk until pale and creamy. Gently fold the yolk mixture into the whisked egg whites until just combined, taking care not to deflate the mixture.
Heat a small non-stick frying pan over medium heat and add the butter. Once melted, pour in the egg mixture, lower the heat and cook for 2 minutes. Cover with a tight-fitting lid and continue cooking for a further 5 minutes, or until the top of the omelette is just set. Remove from the heat.
Scatter the goats cheese over one half of the omelette, then sprinkle with an extra pinch of Citrus Furikake. Using a spatula, gently fold the omelette over to enclose the filling.
To serve
Gently transfer the omelette onto a serving plate and finish with a final sprinkle of Gewürzhaus Citrus Furikake.
Recipe Note
For best results and maximum height, cook the omelette in a small 22cm non-stick frying pan. Whisking the egg whites with an electric mixer will produce a lighter, fluffier texture than whisking by hand.
