Pork Steaks with Saltbush Butter Sauce

3 pork loin steaks (400g)
- Extra virgin olive oil, for drizzling
- Good quality cooking salt
- 100g unsalted butter
- 2 cloves of garlic, finely grated
- 1 tbsp fresh lemon juice

2 tsp Gewürzhaus Salt Bush (Rubbed)
Directions
- Drizzle the pork steaks with olive oil and a pinch of salt and let them come to room temperature.
- Make the drizzle sauce by melting the butter over low heat, add the grated garlic and let it infuse for 1-2 minutes, or until fragrant. Mix in the lemon juice and saltbush and let it infuse for another minute. Turn off the heat and set aside.
- Pre heat a cast iron pan until very hot and place the pork on it to brown, about 3-4 minutes. Then, flip it and cook for another 3-4 minutes. When the pork is about a minute from being done, strain a third of the butter sauce over it (try to avoid the garlic from getting in the pan, or it’ll burn) and turn the heat to low.
- Once cooked, transfer the pork to a plate, drizzle with the remaining butter sauce and cover for 2-3 minutes. Serve immediately.
Recipe Note
Tip: For an extra dose of Australian flavour, try the saltbush butter sauce on grilled lamb cutlets. Also delicious on chicken breast.
