Hot, hot, hot! But oh, so delicious. Harissa is consumed in its native Tunisia as an accompaniment to couscous, grilled meats and slow-cooked stews. It is a versatile chilli blend that can be used in many ways. This spicy seasoning can be stirred into soups and stews, used as a dry rub, mixed with plain yoghurt to marinate chicken or as a dip, or combined with diced tomatoes to spoon onto kebabs and wraps.
Flavour Notes: Punchy, fiery, smoky, fragrant

Fresh, savoury and fragrant, it is one of our very favourite seasonings for poultry, steak, veal, pork and potatoes.

No fresh garlic on hand? No problem! Our Garlic Lovers' Spice can be used as a quick substitute for any recipe calling for garlic. A carbohydrate's best friend, use it with bread, pasta and potatoes. Combine soft butter and Garlic Lovers' Spice for an easy garlic butter, to be spread on a sliced baguette for the perfect garlic bread. For a garlicky mashed potato, add 1 tsp when mashing. This will quickly become a pantry staple, earning its place beside the salt and pepper!

Our Vanilla Bean Sugar uses only the fine seeds from Madagascan vanilla, which are hand-stripped out of each pod. Vanilla bean is the dried and cured seed pod of a tropical South American climbing orchid and it takes up to three months to get market ready.
This sugar also pairs well with pork and, of course, with anything containing chocolate. Great for baking and compotes, simply use in place of normal sugar.
Flavour Notes: Sweet, fragrant, floral
Cuisine: Madagascan

This light, fragrant spice adds a wonderful depth to apple cake, and can replace mixed spice in many recipes. The inclusion of rose petal and calming chamomile add to the blend's delicacy. Add it to the fruit filling or directly into the dough. Not to be dismissed in savoury dishes: try in broths, on roasted cauliflower and in rice dishes alongside cardamom and lemon rind.
Flavour Notes: Floral, complex, warming, delicately spiced
Cuisine: German

This spice will find its way into all your baking, when used with the natural sweetness, smoothness and binding ability of the humble pumpkin. Add to traditionally sugar-heavy goodies and cut out some of the sugar; it also works a treat with granola, nut bars and smoothies, partnering well with coconut and dairy-based dishes. The spice also complements savoury dishes, such as pumpkin gnocchi or zucchini fritters. Of course, it makes the great American Pumpkin Pie.
Flavour Notes: Warmly spiced, woody, slightly sweet
Cuisine: American

Aleppo Peppers are highly desirable for their fresh, fruity flavour and the mild heat that builds slowly on the palate. Aleppo Peppers have a salty, oily flavour that distinguishes them from their crushed red pepper or paprika siblings. These lustrous lacquer-red flakes will add an extra bit of heat and drama to your favourite dishes.

Italian black summer truffles are combined with sea salt to create a blend that turns the most simple dish into a deliciously complex medley of flavours. While all truffle varieties work well with any cooked egg or mushroom dishes, black truffle is earthy and chocolatey, making it ideal for classic sauces, roast chicken, steak, potatoes, winter vegetables or hot buttered popcorn. So precious are the truffles, that Italian truffle harvesters protect their groves by using long winding paths at night or in the early morning fog to confuse potential followers.
Flavour Notes: Earthy, chocolatey, deeply savoury, rich
Cuisine: Italian

Cassia - also known as Dutch cinnamon or baker's cinnamon - is bolder than true cinnamon. Cassia's sweet and spicy fragrance and flavour is more intense than that of cinnamon. Its slight bitterness makes it distinctly different from cinnamon and gives its sweetness depth. Cassia is delicious in more robust sweet dishes such as fruit cakes, strudels, compotes and crumbles. It is often used in curries and stews for a balancing sweetness.
Stick your nose into a sack of cloves and you will understand why ancient mariners claimed to smell the approach of the clove islands while still far out to sea. A terrific and much-used pungent addition to Christmas ham and baked goods, stewed and pickled fruit and vegetables, cakes, pastries and biscuits, German Glühwein, and many North African spice blends. This ground clove is milled fine and ready to use straight from the jar, an ideal option where whole cloves would be too strong or difficult to remove.
