Juniper berry is in fact not a true berry but a cone. Its outer layers do not contain much flavour, so grinding or crushing maximises the release of its fresh green citrus flavours. Juniper imparts a sharp taste to meat dishes, especially wild birds and game meats.

Many of our ground single origin spices are milled locally in small batches to lock in freshness, rather than being milled overseas months before reaching Australian shelves. Whole spices are packed as they arrive from origin, so you can grind or use them as needed.
