Bake golden, warmly spiced apple cake, fruit crumbles and pastry doughs, or use wherever a recipe calls for mixed spice.
Use ¾ tsp of spice with 5 apples to make approximately 500ml of fragrant apple sauce. Equally delicious stirred into porridge, smoothies and pancake batter.
More versatile than it looks - try it with pork or cauliflower, and in rice dishes together with cardamom and lemon rind.

This light, fragrant spice adds a wonderful depth to apple cake, and can replace mixed spice in many recipes. The inclusion of rose petal and calming chamomile add to the blend's delicacy. Add it to the fruit filling or directly into the dough. Not to be dismissed in savoury dishes: try in broths, on roasted cauliflower and in rice dishes alongside cardamom and lemon rind.
