Subtly flavoured with beautifully aromatic lavender, this succulent dish will transport you and your family to the south of France over Sunday lunch.

Ingredients

  • 1 leg of lamb, on the bone

  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 50ml water
  • 1 small handful fresh thyme, finely chopped
  • 1½ tbsp Gewürzhaus French Lavender Salt
  • 1 tbsp Gewürzhaus Lavender Flower (rubbed)
  • 1 tsp cracked pepper 

Directions

    To prepare

    1. Place lamb into a large baking dish.
    2. In a small bowl, combine the remaining ingredients to make the marinade; mix well. 
    3. Massage the marinade evenly into the lamb.
    4. Cover and refrigerate lamb; marinate for at least an hour, or overnight. 

    To cook

    1. Preheat oven to 180°C (fan-forced). 
    2. Place lamb in the oven (25 minutes per 500g). 
    3. After 30 minutes, pour one ladle of roasting juices (or water, if there’s insufficient liquid) over the lamb. Repeat every 30 minutes.

    4. Once the lamb has finished cooking, turn off the oven and let the meat rest for 30 minutes.
    5. Remove lamb from the oven. Sprinkle with a pinch of Lavender Flowers just before serving.
    6. Serve with some of our Fondant Potatoes, Sweet Potato Dauphinoise or Summer Stone Fruit Salad.
