Preheat the air fryer or oven to 180°C (fan-forced if using an oven) and line the tray with baking paper.
In a bowl, combine the pepitas, olive oil and mirin, mixing well to coat evenly. Spread half the pepitas in a single layer in the air fryer tray and cook for 5 minutes, checking at the 3–4 minute mark to prevent burning. Repeat with the remaining pepitas.
While still warm, transfer the pepitas to a bowl and toss with the sesame oil, salt and Gewürzhaus Citrus Furikake until evenly coated.

Cook the pepitas in batches to ensure they toast evenly and remain crisp. Tossing with Gewürzhaus Citrus Furikake while warm helps the seasoning adhere properly.
