12 of the freshest scallops you can get, cleaned and prepared
Gewürzhaus Pyramid Flake Salt
First, make the dressing by mixing the grated cucumber, gin, lime juice, lemon myrtle and a pinch of salt into a bowl. Set aside.
Cut each scallop into 2 slices. The easiest way to do this is to place one hand on top of the scallop and slice it horizontally thought the middle.
Arrange scallops on a plate. Pour the dressing over. Finish with a generous drizzle of olive oil, a good pinch of flaky salt and the lime zest.
