Mix the Garlic Lovers’ Spice with olive oil. Stir well and set aside.
To butterfly the prawns, place them on a chopping board with the tail facing up and use a sharp knife to cut them almost all the way through, including the head. Open them out so they’re flat, and devein.
Brush the flesh of the prawns generously with the oil mixture.
Heat a griddle pan or skillet at medium-high heat for a couple of minutes. Make sure the pan is really hot before adding the prawns.
Place the prawns in the hot pan, flesh side down. Cook for 5–6 minutes, pressing down slightly to help them cook through. Turn them over and cook for another minute or so.
Brush the prawns with the remaining oil, add a pinch of flaky salt and serve immediately with some lemon wedges.
